Split Pea Soup Recipe

Ingredients: – 1 cup dried split pea – 1 onion, diced – 2 carrots, diced – 2 celery stalks, diced – 2 cloves garlic, minced – 6 cups vegetable or chicken broth – Salt and pepper to taste – Optional: ham hock or ham bone for added flavor

Instructions: 1. Rinse the dried split peas under cold water and drain them thoroughly.

In a large pot or Dutch oven, heat some olive oil over medium heat. Add the diced onion, carrots, and celery. Sauté until the vegetables are softened, about 5-7 minutes. 

Add the minced garlic to the pot and cook for an additional 1-2 minutes until fragrant. 

Pour in the vegetable or chicken broth and add the rinsed split peas to the pot. If using, add the ham hock or ham bone for extra flavor. 

Bring the soup to a boil, then reduce the heat to low and let it simmer, partially covered, for about 45-60 minutes or until the split peas are tender and the soup has thickened, stirring occasionally. 

Once the split peas are cooked, remove the ham hock or ham bone from the soup and discard. If desired, you can shred any meat from the bone and add it back to the soup. 

Season the split pea soup with salt and pepper to taste. Serve hot, garnished with fresh herbs if desired.
