Fruited Pork Roast Recipe

INGREDIENTS 2 tbsp olive oil 1 package (about 12 ounces) kielbasa sausage cut into ½-inch slices 2 pounds boneless skinless chicken thighs about 6 1 onion chopped 4 cloves garlic minced 2 cups uncooked converted long grain rice 1 red bell pepper diced ½ cup diced carrots ¾ tsp salt ¼ tsp black pepper ¼ tsp saffron threads optional 3 cups chicken broth ½ cup thawed frozen peas

Press the "Sauté" button on the Instant Pot and heat the olive oil. Add the sliced sausages and cook for about 6 minutes or until browned.

In batches, add the chicken thighs to the Instant Pot and cook for about 8 minutes, turning once, until browned on both sides.

Add diced onion to the pot and cook, stirring occasionally, for about 3 minutes until softened. Add minced garlic and cook for an additional 30 seconds.

Add the rice, diced bell pepper, diced carrots, salt, black pepper, and saffron (if using) to the pot. Stir well and cook for about 3 minutes to toast the rice lightly and coat it with the aromatics.

Pour in the chicken broth, scraping up any browned bits from the bottom of the pot. Return the cooked sausages and chicken thighs to the pot, pressing the chicken into the liquid.

Secure the lid of the Instant Pot and ensure the pressure release valve is set to the "Sealing" position
