Southern Collard Greens Recipe

Ingredients 1 large bunch of collard greens about 3 pounds 1 pound bacon chopped (smoked bacon is ideal) 1 large white onion chopped 2 jalapeno peppers chopped - optional (use milder peppers for less heat) 1 pound smoked ham chopped 4 cloves garlic minced (or more to taste) 12 cups chicken stock 3 quarts 1/2 cup apple cider vinegar

Ensure that the collards are clean and free of grit by washing and rinsing them well. After rolling into ribbons, set aside.

Boil the bacon in a large kettle for awhile. After 10 minutes or until it caramelizes.

Add chilies and onions. Stirring occasionally cooked with it for roughly five minutes or until they turn tenderish.

Mix in garlic and prosciutto. One minute is enough for you to cook it.

Combine reserved collard greens, chicken stock, vinegar, Worcestershire sauce; honey; chili pepper flakes; salt; black pepper; hot sauce;

Cover and simmer gently for one to two hours until desired tenderness is achieved. Collard greens boiled for up to three hours can be made as soft as anything.
