Sous Vide Duck Breast

2 halves duck breast boneless, skin-on 1 tsp salt 2 tsp garlic freshly minced 1/2 tsp black pepper 1/3 tsp thyme, dry 1/3 tsp peppercorn 1 tbsp vegetable oil 1 tbsp apricot peeled and cored, mash with <ucsa>2 tablespoons</ucsa> water 2 tsp sugar


Preparing the Duck: Clean the duck breasts, which means making sure they're free from any dirt or debris. Then, rub them with spices or seasonings. 

Cooking in the Instant Pot: Take the duck breasts out of the fridge and rinse off the spices. Put them in a sealed plastic bag, like a Ziploc bag.  

Cooking the Duck: After 20 minutes of warming up, place the sealed bag of duck breasts into the water in the Instant Pot. Let them cook in the warm water for about 35 to 40 minutes. 

Preparing the Duck for Searing: Once the duck breasts are done cooking in the Instant Pot, take them out of the bag and pat them dry with paper towels. 

Searing the Duck: Heat a frying pan on the stove over medium-high heat. Add a bit of vegetable oil to the pan. 

Serving the Duck: Take the cooked duck breasts out of the pan and slice them into portions. Serve them alongside the apricot sauce. 

Making the Apricot Sauce: To make the sauce, mix together apricot and sugar in a small pot. Bring the mixture to a boil over high heat, then reduce the heat and let it simmer for about 5 minutes.
