Shortbread Cookie Recipe

Ingredients: 1. 1 cup (2 sticks) unsalted butter, softened 2. 1/2 cup granulated sugar 3. 2 cups all-purpose flour 4. 1/4 teaspoon salt 5. Optional: 1 teaspoon vanilla extract or other flavorings (such as lemon zest or almond extract)

Instructions: 1. Preheat Oven: Preheat your oven to 325°F (160°C) and line a baking sheet with parchment paper.

Cream Butter and Sugar: In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. 

Add Flavoring (Optional): If using, add in the vanilla extract or other flavorings and mix until well combined. 

Incorporate Dry Ingredients: Gradually add the flour and salt to the butter mixture, mixing until a dough forms. Be careful not to overmix. 

Shape the Dough: Transfer the dough onto a lightly floured surface and shape it into a disk. Wrap the dough in plastic wrap and refrigerate for about 30 minutes, or until firm. 

Cut and Bake: Once chilled, roll out the dough to about 1/4 inch thickness. Use cookie cutters to cut out desired shapes and place them onto the prepared baking sheet. 

Bake: Bake the cookies in the preheated oven for 12-15 minutes, or until the edges are lightly golden.
