Sambal Oelek Recipe

Ingredients 1 pound red chili peppers, stems removed Thai is traditional, but red jalapenos, serranos and cayenne peppers are good substitutes 2 tablespoons rice vinegar 1 tablespoon salt OPTIONAL ADDITIONS 2 garlic cloves 1 teaspoon lime juice

Mix all the ingredients in a Moulinex or any other grinding item. In this case, a Molcajete is good.


Grind into a rough stuff. If you want to strain out some of the excess liquid.

Place into a closed container. You can keep it in the fridge until needed.

NOTES: As an alternative, this sauce could be simmered for approximately ten minutes on medium heat.
