Penne Margherita With Chicken And Broccoli

2 tbsp olive oil 1 boneless, skinless chicken breast, diced ½ cup onion, cubed 2 clove garlic minced 1 tbsp tomato paste 1 cup tomato sauce ½ tsp paprika ½ tbsp salt


– 1 cup chicken stock – 1 ½ cup water – 7.26 oz Penne – 7 broccoli floret – ½ tsp sugar – 2 tbsp Parmesan cheese grated – 1 cup mozzarella cheese, grated


Start by selecting the "Sauté" mode and set it to high. Once the pot is hot, pour in some olive oil.

Add chicken pieces and let them brown, stirring occasionally. Toss in onions and garlic, cooking until onions turn see-through.

Add tomato paste, sauce, salt, and paprika, stirring for 2 minutes. Pour in chicken stock and water, scraping any bits stuck to the bottom. Cancel the sauté mode.

Stir in pasta and broccoli, then pressure cook on high for 3 minutes. Quick release pressure when done. 

After pressure release, open the lid, stir in sugar and parmesan cheese. 

Top with mozzarella cheese, close the lid, and select "Broil" at 400°F for 6 minutes. Brown the cheese on top, then serve and enjoy!
