Mediterranean Veggie Burgers With Mint-Yogurt Sauce And Carrot Salad

Preheat the oven to 375°F. In a large bowl, mix together the chickpeas, breadcrumbs, egg, garlic, cumin, coriander, salt, and pepper.

Form the mixture into 4 patties and place them on a baking sheet lined with parchment paper. Bake the patties for 20-25 minutes, flipping them halfway through.

While the patties are baking, make the mint-yogurt sauce by mixing together the yogurt, mint, lemon juice, and salt.

In a separate bowl, mix together the shredded carrots, lemon juice, olive oil, salt, and pepper to make the carrot salad.

When the patties are done, assemble the burgers by placing each patty on a bun and topping it with the mint-yogurt sauce and carrot salad.

The Mediterranean flavors of chickpeas, cumin, and coriander give these veggie burgers a delicious twist.
