Leftover Loaded Mashed Potato Snowballs

4 slices bacon Cooking oil spray 2 cups leftover mashed potatoes 1 cup shredded Cheddar cheese 2 tbsp fresh chives, chopped 2 tbsp onion, small diced 3 large eggs, beaten 1 1/2 cups panko ½ cup AP flour 2 tbsp freshly grated Parmesan for garnish, optional 1 tsp parsley flakes for garnish, optional Salt and pepper to taste

Ingredient

Place the bacon slices in the air fryer (AF) basket and close it. Select the air fry setting, set the temperature to 400°F, and the time for 4 minutes. Press Start.

When the AF shows the "Turn Food" sign, flip the bacon with tongs and close the basket to continue cooking. 

Once the cooking cycle ends, remove the AF basket and place the bacon on a cutting board. Chop it and set it aside. 

1. In a large bowl, combine mashed potatoes, cheese, chives, onion, and the chopped bacon. 2. Roll the mixture into balls, using a small cookie scoop, forming about 25 balls.

Working one at a time, dip each ball into flour first, then eggs, and lastly dredge in Panko breadcrumbs, pressing to coat. 

1. Work in batches and place the coated balls on a lined parchment paper tray. 2. Freeze the balls for at least 2-3 hours or overnight.
