Homemade Bagel Recipe

Ingredients 1 tablespoon maple syrup or barley malt syrup 1 pkg. (¼-ounce) active dry yeast, (2¼ teaspoons) 1¼ cups warm water 540 grams bread flour* 2 teaspoons sea salt For the poaching water 1½ tablespoons maple syrup 2 teaspoons baking soda ½ tablespoon salt

To make the dough, mix yeast, water and maple syrup in a small bowl and let it proof for 5 minutes until frothy.


Put flour, salt and liquid yeast into a mixer with a large dough hook so that it can be mixed. 

Mix this on medium-low speed for around five to seven minutes until the dough forms well around the hook whichever comes first.

If after three minutes the dough is still very dry add one tablespoon of water. 

Move the dough onto clean work surface and knead it by rolling for two or three minutes until it is smooth and slightly sticky. 

Afterward it should be formed into a ball shape then placed in large bowl.

Cover with plastic wrap and put in warm place for about sixty to ninety minutes till it rises (it may rise to just less than twice its size or slightly greater than twice its size).
