Healthy Cinnamon Apple Muffins With Rolled Oats

Ingredients: – 1 ½ cups rolled oats (160g) – 1 ½ cups milk (375ml) – 1 large apple (200g) – 1 teaspoon vanilla essence – 1 cup flour (130g) – 2 teaspoons cinnamon – 3 teaspoons baking powder – 80g brown sugar (approximately one third of a cup; any granulated sugar can be used)

Instructions: 1. Preheat the oven to 180 degrees Celsius (approximately 350°F). 2. Prepare a 12-cup muffin tin by greasing it or lining it with paper cups.

Grate the apple. Soak the rolled oats and grated apple with vanilla in the milk. This is best done for at least 20 minutes, or overnight for best results. Soaking the rolled oats helps make the muffins soft and fluffy. 

In a large mixing bowl, combine the dry ingredients: flour, baking powder, cinnamon, and brown sugar. Use a whisk or fork to mix them together. 

1. Add the applesauce and olive oil (or melted butter) to the soaked oats mixture and mix well.

1. Add the wet ingredients to the dry ingredients and gently combine until just mixed. 2. Portion the batter into the muffin tray.

Bake for 25-30 minutes. The muffins will be golden and should bounce back when gently pressed in the center. Allow them to cool in the tray for 5 minutes before removing.
