Fresh Spring Rolls Recipe

Ingredients: – Rice paper wrappers – Lettuce leaves – Carrots, julienned – Cucumber, julienned – Bell pepper, thinly sliced – Fresh mint leaves – Fresh cilantro leaves – Cooked shrimp or tofu (optional) – Rice vermicelli, cooked and cooled

Begin by soaking one rice paper wrapper in warm water for about 10-15 seconds, or until it becomes soft and pliable.

Lay the softened rice paper on a clean surface, such as a cutting board or plate.

Layer a lettuce leaf on the bottom half of the rice paper wrapper, leaving a border of about 1-2 inches.

Add a small handful of rice vermicelli on top of the lettuce leaf, followed by a few strips of carrots, cucumber, bell pepper, and your choice of cooked shrimp or tofu.

Top with a few fresh mint and cilantro leaves for added flavor.

Fold the bottom edge of the rice paper wrapper over the filling, then fold in the sides, and roll tightly to enclose the filling completely.

Repeat with the remaining ingredients until you have made desired amount of spring rolls.
