Easy Pumpkin Banana Muffins Recipe

Ingredients Muffin Ingredients: 1-1/4 cups all purpose flour 1-1/2 teaspoons baking powder 1/2 teaspoon ground cinnamon 1/2 teaspoon salt 1/4 teaspoon baking soda 1 banana, mashed, about 1/2 cup 2/3 cup brown sugar 1/2 cup pure pumpkin puree 1/4 cup vegetable oil 1 egg

Glaze Ingredients: 1/4 cup powdered sugar 2 tablespoons half and half 2 tablespoons brown sugar 1 tablespoon unsalted butter 1 teaspoon vanilla 1/4 teaspoon ground cinnamon

Grease a standard twelve-cup muffin tin with papers and preheat the oven to 425 degrees. Leave aside; set apart.


Put the flour, baking powder, cinnamon, salt and baking soda together in a little bowl. Complement and place on one side.

In a large mixing bowl, combine mashed bananas, brown sugar, pumpkin puree, oil and egg. Stir thoroughly. 

Fold in the flour mixture just until combined. Fill prepared muffin liners or pan using 3-tablespoon portion scoop of muffin mixture.

Bake at 425 degrees F for 5 minutes reducing heat to 375 degrees F or till toothpick inserted into center comes out clean. Remove from oven before glazing is done; let it cool completely.

Combine granulated sugar, halfandhalf, brown sugar, butter and cinnamon in a small saucepan. Heat over medium heat whisking until smooth and all of the sugar dissolves.

There may be some bubbling at the edges of the mixture as it heats slowly on medium high temperature so stir occasionally to avoid burning them down this will take about ten minutes .
