Crispy Smashed Potatoes Recipe

Ingredients: – 1 pound baby potatoe – 2 tablespoons olive oil – Salt to taste – Black pepper to taste – 2 cloves garlic, minced – 1 teaspoon dried rosemary (or herb of your choice) – Optional toppings: grated Parmesan cheese, chopped fresh parsley

Instructions: 1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

Place the baby potatoes in a large pot and cover them with water. Bring to a boil over high heat and cook for about 15-20 minutes, or until the potatoes are fork-tender. 

Drain the potatoes and let them cool slightly. Once cooled, place them on the prepared baking sheet. 

Using the bottom of a glass or a potato masher, gently smash each potato until it is flattened but still holds together. 

Drizzle olive oil over the smashed potatoes, then sprinkle with salt, black pepper, minced garlic, and dried rosemary. 

Bake in the preheated oven for 20-25 minutes, or until the potatoes are golden brown and crispy around the edges. 

Once done, remove from the oven and sprinkle with optional toppings like grated Parmesan cheese and chopped fresh parsley for an extra burst of flavor.
