CHRISTMAS SPICED VICTORIA SPONGE CAKE

Preheat the oven to 180°C and grease two 20cm cake tins. In a large mixing bowl, cream together butter and sugar until light and fluffy.

Add in eggs one at a time, mixing well after each addition. Sift in flour, baking powder, and spices and fold gently until just combined.

Add in milk and mix until the batter is smooth.

Divide the batter evenly between the two cake tins and smooth the tops. Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.

Allow the cakes to cool completely before removing from the tins.

Spread a layer of whipped cream and jam on one cake and place the other cake on top.
