Chicken And Polenta Puttanesca Melts

Preheat the oven to 400 degrees F. Season the chicken breasts with salt and pepper.

Heat a large oven-safe skillet over medium-high heat. Add the chicken and cook for 3-4 minutes per side, until browned.

Remove the chicken from the skillet and set aside. Add the garlic to the skillet and cook for 1-2 minutes, until fragrant.

Add the tomato sauce, olives, capers, and red pepper flakes to the skillet. Bring the sauce to a simmer and cook for 5-7 minutes, until slightly thickened.

Meanwhile, prepare the polenta according to package instructions. Slice the chicken into thin strips.

Slice the chicken into thin strips. Spread the polenta in the bottom of the skillet. Top with the chicken strips and the puttanesca sauce.
