– 3 egg – 1/4 cup diced bell peppers (any color you prefer) – 1/4 cup diced onion – 1/4 cup diced tomatoe – 1/4 cup diced cooked ham or bacon (optional) – 1/4 cup shredded cheese (cheddar, mozzarella, or your favorite) – Salt and pepper to taste – 1 tablespoon butter or cooking oil


Prep your ingredients: Dice the bell peppers, onions, tomatoes, and ham (if using). Shred the cheese if it's not already shredded.

Whisk the eggs: In a bowl, crack the eggs and whisk them together until well beaten. Season with salt and pepper to taste. 

Cook the veggies: Heat the butter or cooking oil in a non-stick skillet over medium heat. 

Add the tomatoes and ham: Once the bell peppers and onions are soft, add the diced tomatoes and cooked ham (if using) to the skillet. 

Pour in the eggs: Pour the beaten eggs over the cooked veggies and ham in the skillet. Allow the eggs to set slightly around the edges. 

Add cheese: Sprinkle the shredded cheese evenly over the eggs. 

Fold the omelette: Using a spatula, carefully fold one side of the omelette over the filling to the center. Then fold the other side over to cover the filling completely. 

Serve: Slide the omelette onto a plate and serve hot. You can garnish with fresh herbs like parsley or chives if desired.
