Baked Mushroom Chicken

Ingredients – 4 boneless skinless chicken breast halves (1 pound) – 1/4 cup all-purpose flour – 3 tablespoons butter, divided – 1 cup sliced fresh mushrooms – 1/2 cup chicken broth

– 1/4 teaspoon salt – 1/8 teaspoon pepper – 1/3 cup shredded part-skim mozzarella cheese – 1/3 cup grated Parmesan cheese – 1/4 cup sliced green onions

1. Flatten each chicken breast until it's about 1/4-inch thick. 2. Put some flour in a shallow bowl. Coat both sides of the chicken with the flour, shaking off any extra.

Heat a large skillet and melt 2 tablespoons of butter. Brown the chicken in the skillet on both sides.

In the same skillet, cook the mushrooms with the remaining butter until they're tender. Add the broth, salt, and pepper

Bake the chicken in the oven, uncovered, at 375°F until it's no longer pink inside, which usually takes about 15 minutes

Sprinkle the chicken with cheeses and green onions. Put it back in the oven and bake for another 5 minutes, or until the cheese is melted.
