Air Fried Aubergine Recipe

Prepare the Eggplant: First, you need to cut the eggplant into slices that are about 1 centimeter thick. This ensures they cook evenly. 

Remove Bitterness: Next, place the eggplant slices on a cooling rack or in a colander. Sprinkle a little salt on each slice. 

This step helps to draw out any bitter juices from the eggplant. Leave them like this for about 8 minutes. Afterward, pat them dry with a paper towel to remove the excess moisture. 

Oil and Air Fry: Once the eggplant slices are dry, brush them with oil. This helps them crisp up nicely in the air fryer. 

1. Then, arrange the slices in a single layer in the basket of your air fryer. 2. Set the Air Fryer: Now, it's time to set your air fryer. 

Flip the Slices: When the air fryer prompts you to "Turn Food", it means you need to flip the eggplant slices over halfway through cooking.  

This ensures both sides cook evenly and become golden brown and crispy.
